LOVECAKES


Love is in the air and on the plate--
from daughter Sue who lives in NJ:

Get out your favorite Plant-Based pancake recipe (whole grain, non dairy milk, egg replacer or mashed flaxseed, no oil)
Add a berry puree (spin fresh or frozen berries in blender) to half the batter. Using a heart-shaped cookie cutter cut and exchange centers for your very own lovecakes!

BEAUTIFUL BURRITOS

Sienna 11 creates a colorful arrangement of corn, black beans, tomatoes, avocado, spinach leaves and a sprinkling of onion on a whole grain tortilla.

Kaylee 7 varies her creation with the addition of fat-free refried beans.
Both granddaughters roll them up and warm them in the microwave.
What could be simpler and more nourishing?

A POTATO A DAY KEEPS DISEASE AT BAY!

Potatoes have been getting a bad rap for far too long.  Plant-based eaters as well as everyone else need potatoes for energy and for vital nutrients. Yes, potatoes are high in carbs, but the kind of carbs that deliver energy, not the empty carbs of white bread and french fries that deliver disease.

We have potatoes every day at our house--sometimes white, sometimes sweet, sometimes baked and sometimes mashed.  We even roast them with other veggies topped with a fat-free sauce or boil them with rutabagas, fennel and leaks for a luscious, creamy soup. Don't deprive yourself of one of nature's finest. Have a potato today!
 Chopped baked potato with black beans and salad greens dressed with vinegar, mustard and salsa.

Enjoyed the Yum!

We dropped by Modern Mixture at 62A Rehoboth Ave. in the beach block, unannounced, to check out Chef Leo's lunch menu. Rehoboth Beach was hoppin' this beautiful sky-blue Polar Plunge weekend. Were we ever in luck!  He took a break from Chili Cookout prep to make us a luscious lunch of mashed potatoes, fresh made salsa and a super salad of black beans, greens and quinoa with citrus dressing,
WHOLE FOOD, PLANT-BASED, NO OIL!  
Best lunch in town!
