A POTATO A DAY KEEPS DISEASE AT BAY!

Potatoes have been getting a bad rap for far too long.  Plant-based eaters as well as everyone else need potatoes for energy and for vital nutrients. Yes, potatoes are high in carbs, but the kind of carbs that deliver energy, not the empty carbs of white bread and french fries that deliver disease.

We have potatoes every day at our house--sometimes white, sometimes sweet, sometimes baked and sometimes mashed.  We even roast them with other veggies topped with a fat-free sauce or boil them with rutabagas, fennel and leaks for a luscious, creamy soup. Don't deprive yourself of one of nature's finest. Have a potato today!
